So today on GDP we had the Chef from Barclay Prime James LoCasio and he delivered some great tips for summer grilling.

- never put cold meat on a hot grill

- don't let the kids even see you turn on the grill... the Chef says they might want to play with it when you are not paying attention  DANGEROUS

- the Chef advised AGAINST pulling the lid down.  he says it will shorten your cooking time so incredibly that you are bound to burn anything you are cooking

- and finally... here's a DO.  he says DO take anything and everything out of your garden .. mint parsley.. all the herbs you can find and use them for a marinade.  and then take the marinade off the meat / fish / chicken etc so that you don't create flames you can't control.

If you are searing meat, don't try to flip it before the "seal" breaks....Meaning, if your food is "sticking to the grill rack, Wait....Eventually a crust will form on the meat and it will separate from the grill rack, Then flip.

Jim, so are you volunteering yourself to hold the blog BBQ? :)

I marinate chicken breast in teriyaki sauce with a touch of soy sauce and sprinkle of garlic for an entire day. Then I grill it up and top it with robosto Italian salad dressing. BAM! It is amazing. I can hear it sizzling already...... Ahhh.....
