I have two ladies who work for me that have families and my wife is a teacher. I often here these words from one of them during the course of a week..."I wanna have something different for dinner but I don't know what to fix.."

Why don't we share some of our favorite dishes. Two or three dishes each should give everyone some ideas about doing something different. So here is some of my families favorites;

1) Chicken and rice casserole

2) Fried Taco's

3) Smoked Pork loin

Now, whats for dinner?

why not make some salmon patties with bread crumbs and onion salt with some beef or chicken rice o roni

When I am hungry and don't know what to make I'll make my special tomato-veggie-beef soup. Quick, simple, and ohhhhhhhhhh so good. What's great is you can put just about anything in it that you have in the freezer or cabinet, though I love it with fresh veggies, the canned or frozen work well too.

1 pound of any kind of beef (stew mean, diced sirloin, etc)

Veggies of your choice (I typically use greenbeans, corn, peas, potatoes, and carrots)

2 beef boullion cubes

1-32 ounce bottle ketchup (I know it sounds silly, but it is what makes the soup good)

1/4 cup sugar

Dice beef, add to stockpot with 2 quarts water and boullion. Bring to boil, then reduce heat, cover, and let simmer for 1 hour.

Drain veggies and add to pot.

Dump in the bottle of ketchup and the sugar. Bring to boil, reduce heat to simmer, cover and let cook for 30 minutes.

Stock should have a bit of a sweet and sour taste.

I make this for the participants at the center and they all love it.

Chicken Ceasar Salad . . . YUM

2 boneless/skinless chicken breast
1 bunch red leaf lettuce
1/4 diced purple onion
1 bottle ceasar salad dressing of choice
2 Tablespoons grated parmesean cheese
garlic sale (or powder), poultry seasoning, fresh ground pepper
Croutons of choice

Marinate chicken in 1/3 bottle of ceasar salad dressing for 2 hours (lite ceasar does not do well)

Remove chicken from marinade and season with spices and cook in 2 tablespoons of olive oil until done.

While cooking prepare greens and onion.

When chicken is done slice into 1/4" slices.

Add chicken to salad, parmesan cheese, and croutons.

Cover with remaining dressing.

Hot Pepper Beef

2 packages of breakfast steak
2 peppers (green, yellow, red)
1 purple onion (others will do too)
1 small container grape tomatoes
2 Tablespoons wok oil
1 bottle House of Tsang stir fry sauce

Heat wok with oil, add slices of breakfast steak and let cook til done.

Add diced pepper and onion.

Add 1/2 bottle stir fry sauce (spicy or regular)

Let cook until it is the desired level of doneness, usually about 10-15 minutes.

Add tomatoes and stir, heating until tomatoes are hot.

Serve with your favorite sides.

Great Northern Bean Stew

Ingredients:
1 pound bulk pork sausage
1 cup chopped onion
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 can (28 ounces) diced tomatoes, undrained
2 cups chopped cabbage
1 cup sliced carrots
1 tablespoon white vinegar
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon hot pepper sauce
2 tablespoons minced fresh parsley
Directions:
In a large saucepan, cook sausage and onion over medium heat until meat is no longer pink; drain. Add the next 11 ingredients. Bring to a boil. Reduce heat; cover and simmer for 50-60 minutes or until vegetables are tender. Stir in parsley; cook 5 minutes longer. Yield: 6 servings

I usually use more cabbage and spice it to my own liking..but the basic recipe is really good too!!!

I never care what we have for dinner as long as dad cooks it and mom don't....LOL

We usaly have chiken,ham,pork of some kind.bugers,meatlof,porkchops but not too offten I sometimes get sick just smelling them but getting better at at..Pork stakes lot times..Fish usaly thease are our big meals oh ya and beef stuff too and eggs and bacon..

Well the main thing to have for the Smoked Loin is the smoker. None the less this is pretty simple.

I buy whole pork loin about 2 feet long.
Buy or create about any kind of rub seasoning
Run the loin down a couple hours before smokin
Put on the smoker for about 2 1/2 hours.
About half way through use your rub and honey to make a paste. Brush it on and when its done
um...um..good.

The Fried Taco works like this...make up your regular taco fixings. Take your tortilla uncooked, place your cooked taco meat in it pen it together with tooth picks and now deep fry it. Once done open it and fix it like any other taco....

No Peak stew and Shepards pie is my families 2 favorites (tho for the boys shepards pie is the winner)....

Taco Salad

Lettuce
onions
tomatoes
can of red kidney beans ( drained and rinsed)
shredded cheddar cheese
Taco chips ( broken up)

dressing

1 c ketsup
1 c oil
1 c vinegar ( I used cidar vinegar)
1 c sugar

Mix well

Chicken w/Rice

Put all ingr. in crock pot.
Chicken Breasts
Seasongs...and bay leaf
(1) Can of cream mushroom or chicken

After the chicken is done....add Rice.
YUMMY!

Also Chicken Salad

I sometimes boil, baked or grill my chicken before cutting it up for the salad.

I add mayo, parsley and celery
Some garlic powder and accent

Let sit overnight for flavors to infuse...and again...YUMMY!

OK today...I dropped a pork butt in the crock pot with some onions, seasonings, celery, bay leaf, wortorshire sauce and some vinegar.....cant wait until AI time!!!

Grilled: salmon steak, shark steak, sea bass steak, mahi-mahi steak, tuna steak, fire'cracker jumbo prawn/shrimp, maui onion, pineapple, peppers, zucchini, eggplant.

smoked/slow cooked (6-8 hours): pork ribs, kalua pork, turkey.


thai spicey shrimp with veggies and a coconut milk/curry sauce, sweet and sour pork(from scratch), chicken and dumplings(both egg noogle or biscuit)

Hungarian stuffed peppers or cabbage, stuffed tomatoes, stuffed porta-bella, beef and barley soup, black bean and bacon soup, fajita nachos, barbacoa borrito, filet mignon with a red wine reduction sauce...... ok I'm hungry now.. have to stop!lol
